I think they can make software checking coulsion just by seeing every player hole cards and crossing this info with every player in the table, and they can easily check if some player is playing in a very "perfect" (mathematcally speaking) and then pay attention to him specifically.

if its clever enough, sure. This game is only ever about getting a tiny edge, so you aren't dependent on luck. And if its not luck then a computer programme could be written to do it....
